PORK SHARES

Offering whole and half shares every fall to fill your freezer for the winter! From farrow to finish our pigs are loved from the second they are born until the day they are harvested in the comfort of their pasture. We pride ourselves in the care of our animals which correlates to the taste of the superior meat they provide for our families and yours. Find out all about our shares below!

THE BUTCHER

We are stoked to be working with Stratton’s Custom Meats and Smokehouse again this year! Greg Stratton and his team have been practicing on farm mobile butchery and processing for the past 14 years. Having been a farmer himself, he is very passionate about animal care and customer satisfaction in turn leading to a stress-free and straight forward exchange. We believe having the pigs in the comfort of their own environment and eliminating the hassle of transport and stay at the slaughter house makes for a much higher quality of meat. We will work closely with each pork share member to help walk you through the custom-cutting process done by Stratton’s. Thus guaranteeing you will end up with a product that matches all of your tastes and desires!

HOW TO PURCHASE

To secure your share we take a 30% deposit of the estimated total pig cost - $450 for a whole pig and $225 for a half pig. Once your pig is harvested and sent to the butcher for processing you will receive a final invoice from the farm. This will have your price per pound ($6/LB) plus slaughter fees ($65/whole pig, $33/half pig).

Harvest date is set for mid January 2024 and pick up is available approximately 1 week after. Your shares will be available to pick up from Stratton’s Custom Meats & Smokehouse, 705 Pine Valley Road Hoosick Falls, NY 12090. At pick up you will get your invoice for your cut and wrap fees and payment is due on site.

Stratton’s is a cash only business.

PRICE BREAKDOWN FOR A HALF SHARE

  • Hanging weight for a half hog is approximately 125 pounds

  • Your deposit to farm 30% = $225

  • Hanging weight: $6/lb X 125lbs - $225 deposit = $525

  • Slaughter Fee = $33

  • Butcher Fees: $1/lb for cut and wrap (sausage links, kielbasa and smoking are an additional costs) = $125

  • Final Estimated Cost: $908 ($7.25/pound)

Our half shares average out around 125 lbs hanging weight and full shares average out around 250 lbs hanging weight. You should expect a final product weight that is 80-85% of the hanging weight.

EXAMPLE CUTS HALF HOG

  • 15-25 pork chops (depending on the thickness of the cut)

  • 2 roasts

  • 1 fresh ham

  • 8 lbs. of fresh slab bacon

  • 3 lbs. of spare ribs

  • 9 lbs. of ground pork

  • 5 lbs. soup bones and hocks

  • leaf lard and back fat for rendering

    *Plan on approximately one cubic foot of freezer space for every 15-20 pounds of meat. For reference the interior of a milk crate is slightly more than a cubic foot. For a whole hog, you will need approximately 5-6 cubic feet of freezer space.*
